It is a chicken soup that containdifferent types of potatoes and can be served alone or with cream and pickled capers, usually in clay bowls. The ajiaco also usually includes baby corn cobs. For the important cultural role it is considered a santafereña tradition (the colonial name of the city, Santa Fe de Bogota).
